Ingredients

2 medium bananas

2 eggs

1 cup oats

1 large tsp baking powder

+ butter or oil for cooking

Method

Place all ingredients into a blender or NutriBullet and blend for 30 seconds.

Place a large pan on medium heat, when hot add 1 tsp butter or oil to the pan the pour 3 medium size pancakes into the pan. Cook for 2 minutes or until bubbles are starting to show through, flip and cook for 1 remaining minute.

Repeat with remaining mixture.

Serve with fresh or stewed fruits, yoghurt/coconut yoghurt and maple syrup.

Additional extras: Bacon, toasted nuts/seeds, granola, coconut chia yoghurt, cinnamon…
